Food Tag

Heidi sent this food tag to me so here it goes.

My Facts:
1) I eat the entire time I'm cooking. I rarely eat the finished product.
2) I do not consider sushi or any other raw "food" to be food. It's just weird. I'm not a bear catching salmon out of a river!
3) It's a hit or miss thing with me. Luckily Dan will eat just about anything
4) I hate cookbooks. Magazines are better.
5) My biggest accomplishment: Dan's mom (a super cook) saying the cheesecake I made for Christmas was the best she had ever tasted. I have arrived!! Please read #5 again :)

Okay, I don't know anyone besides Heidi and Anne who have recipe blogs so I'm going to remind Anne that Heidi tagged her :) :)

Creamy Roasted Red Pepper Hummus


INGREDIENTS
1 (15 ounce) can garbanzo beans, drained
1 (4 ounce) jar roasted red peppers
3 tablespoons lemon juice
1 1/2 tablespoons sesame seed oil
1 clove garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 tablespoon chopped fresh parsley
1 brick cream cheese, room temp


DIRECTIONS
In an electric blender or food processor, puree the chickpeas, red peppers, lemon juice, oil, garlic, cumin, cayenne, and salt. Process, using long pulses, until the mixture is fairly smooth, and slightly fluffy. Make sure to scrape the mixture off the sides of the food processor or blender in between pulses. Add cream cheese and continue to blend. Transfer to a serving bowl and refrigerate for at least 1 hour. (The hummus can be made up to 3 days ahead and refrigerated. Return to room temperature before serving.)
Sprinkle the hummus with the chopped parsley before serving.
