1 and 1/2 c. Bisquick mix
1 c. milk
4 Tbs butter
1/4 c. cheddar cheese
1 Tb garlic seasoning
1. Preheat oven 400
2. Combine all ingredients, mix until uniformly mixed
3. Drop by large spoon fulls onto a greased baking sheet
4. Bake ~10 min

Garlic Cheese Biscuits

Homemade Spaghetti & Lasagna Sauce
1 (28oz) can stewed tomatoes
1 (28oz) can crushed tomatoes
1 (28oz) can tomato sauce
1 (6oz) can tomato paste
2 yellow onions, 1 grated and 1 chopped
2 green bell peppers, chopped
5 cloves garlic, minced
2 Tbs white sugar
2 Tbs freshly chopped basil*
1/2 tsp dried oregano
1 cup freshly grated Parmesan cheese*
1 cup freshly grated Romano cheese*
4 Tbs chicken broth (optional)
2 Tbs red wine (optional)
1 lb ground beef
1. Blend tomatoes in blender (-or substitute can of stewed tomato with crushed or sauce) and transfer to slow cooker
2. Too slow cooker add: browned ground beef, chopped and grated onion (easiest to grate over slow cooker), pepper, garlic, basil, sugar, oregano, grated cheeses, red wine, chicken broth, and salt and pepper to taste.
3. Cook on low 8-10 hours
-A LOT of work but so worth it. I usually double the recipe and freeze some.

-use tomato paste or chicken broth to thicken or thin sauce to desired consistency

Whole Wheat Banana Nut Bread
INGREDIENTS
1/3 cup vegetable oil
1/2 cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 3/4 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup hot water
1/2 cup chopped walnuts
DIRECTIONS
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter.
3. Blend in chopped nuts. Spread batter into a greased 9x5 inch loaf pan.
4. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

New York Style Cheesecake
INGREDIENTS
1 1/2 cup crushed graham crackers
1/4 cup butter, melted
1/2 teaspoon ground cinammon
dash of nutmeg
4 (8 ounce) packages cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour
DIRECTIONS
1. Preheat oven to 325 degrees F (175 degrees C). Grease a 9 inch spring form pan. Place a pan with water on lowest oven rack.
2. In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of spring form pan.
3. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4. Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.
MODIFICATIONS
Chocolate version:
1. Replace milk with 1/2 cup melted chocolate chips
2. Use chocolate graham crackers as a crust
Flavors:
1. Replace milk with Kahlua or Irish cream liquor

Broiled Tilapia Parmesan
INGREDIENTS
1/2 cup Parmesan cheese
1/4 cup butter, softened
3 tablespoons mayonnaise
2 tablespoons fresh lemon juice
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon onion powder
1/8 teaspoon celery salt
2 pounds tilapia fillets
DIRECTIONS
Preheat your oven's broiler. Grease a broiling pan or line pan with aluminum foil.
In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

Baked Dijon Salmon
INGREDIENTS
1/4 cup butter, melted
3 tablespoons Dijon mustard
1 1/2 tablespoons honey
1/4 cup dry bread crumbs
1/4 cup finely chopped pecans
4 teaspoons chopped fresh parsley
4 (4 ounce) fillets salmon
salt and pepper to taste
1 lemon, for garnish
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C).
2. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
3. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the bread crumb mixture.
4. Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon.
